Agave-Sweetened Brownies

I had a feeling it was time to bring out my Babycakes cookbook again.  I was making Peanut Butter Blondies with Milk Chocolate Frosting as dessert for a pot-luck / games night with some friends, and thought I needed to achieve a sense of balance between vegan and main-stream-everyday-ingredients desserts.  Also, I was really curious about the taste of the Agave-Sweetened Brownies.  I have to say that I really enjoyed these brownies and would make them again.  The only thing I would do differently is bake them a little shorter – in an effort to achieve the dense brownie texture.  Enjoy!

Cranberry & Orange Muffins

I find cranberry and orange muffins a bit difficult to master, as the cranberry is very bold and has great potential to hide any of the orange flavors.  However, with this recipe you could taste the orange flavor just as much as the cranberry.  There was a very nice balance.  These muffins are perfectly moist and great for breakfast or lunches.  Enjoy!

Zucchini and Corn Taco Seasoned Quinoa Salad

I’ve been on the hunt for tasty salad recipes.  I know salads are traditionally a summer time meal, but lately I’ve felt like my staple lunch meal needed a little zesting up.  I was also looking for a dish that was healthy.  For those of you who have never heard of quinoa is a grain like crop with great nutritional value, as its protein content is very high (12%–18%). Further, quinoa is It is a good source of dietary fiber and phosphorus and is high in magnesium and iron.  Quinoa is gluten-free and considered easy to digest.  This salad is incredibly easy to create and delicious to eat.  Enjoy! Vegan Banana Bread

Not going to lie, we’re probably the worst banana bread bakers in the world.  I’ve tried countless recipes over the past years, heck, I think there’s like already 4 banana bread recipes on this blog! Well, I can finally say that I have found the perfect recipe for banana bread.  We’ve never had any bread come out this moist and still retain its shape!  Don’t let the fact it’s Vegan turn you off, it’s so delicious you’ll quickly forget all about that.

Tofu Scramble

Recently, Andre and I were visiting a friend in Toronto, who made us a delicious breakfast.  Now, this breakfast wasn’t any ordinary meal because our friend isn’t an ordinary person and she doesn’t consume ordinary every day food, which sits well with Andre and I.  Anyway, our friend made tofu scramble, which is suppose to resemble scramble eggs.  I must say, that I was a little skeptic of the tofu scramble but after the first bite, it tasted quite similar to eggs.  Another bonus I found, my stomach didn’t get that queasy feeling that usually comes about after eating eggs.   I encourage all anyone who is reading this to try this recipe just once, and I’m certain you will become a fan!
