Through recent inspiration (let’s blame Jesse over at beansandtoast.com) I decided to make a quick and easy Korma dish, but was tired of the usual chicken that we normally eat in Indian food. So instead I got some veggies, coconut milk and korma paste together and created a lovely vegetarian dish that tasty is and filling!

We’re slowly making our way through our huge folder of recipes, and upon seeing this one, I was compelled to taste it once more!
