Vegetable Korma

Through recent inspiration (let’s blame Jesse over at beansandtoast.com) I decided to make a quick and easy Korma dish, but was tired of the usual chicken that we normally eat in Indian food.  So instead I got some veggies, coconut milk and korma paste together and created a lovely vegetarian dish that tasty is and filling!

Beef, Bean and Cilantro Chili

Do you have a food/dish that you associate with a season, and reminisce about the flavours and taste as soon as that perfect first seasonal day happens?  I’m certain everyone must have one!  For me, one of my favourite dish is Chili on a sunny, crisp Fall day.  I have been in search of the ‘golden’ recipe for Chili for quite some time.  Most of the recipes are a meat lovers dream come true, but I prefer my Chili with more beans than meat and some veggies.   On Thanksgiving weekend, my search came to an end.  I found THE recipe.  I hope you enjoy this recipe as much as my partner, Andre, and I have.

Tofu Scramble

Recently, Andre and I were visiting a friend in Toronto, who made us a delicious breakfast.  Now, this breakfast wasn’t any ordinary meal because our friend isn’t an ordinary person and she doesn’t consume ordinary every day food, which sits well with Andre and I.  Anyway, our friend made tofu scramble, which is suppose to resemble scramble eggs.  I must say, that I was a little skeptic of the tofu scramble but after the first bite, it tasted quite similar to eggs.  Another bonus I found, my stomach didn’t get that queasy feeling that usually comes about after eating eggs.   I encourage all anyone who is reading this to try this recipe just once, and I’m certain you will become a fan!

I had an impromptu day off today (lightning damaged our transformer at the office) so I thought I would take the time to make a simple yet tasty sandwich for lunch.  I love a little heat in my dishes, and that was the goal of the tasty mayo I whipped up.  Melanie loved it too!

Caribbean Pineapple Salsa

We recently had a Caribbean cookout, as some might say ‘Bachannal’, the weather was hot and the drinks were cold: Perfect for a caribbean day full of food!  This salsa originally called for habanero peppers, a full cup of them, but their rarity in Southern Ontario made it rather difficult to find, so I used hot yellow peppers. (Recipe adapted from 28 cooks).  Add the sweetness of the pineapple and you’ve got a medium spicy salsa that is addictive!

Smoke and Fire Beef Skewers with Lime Cilantro Dip

beef_skewersWe’ve been entertaining quite a bit as of late, and we’ve been digging up some recipes from our great big book of appetizers (it’s actually quite diminutive).  This latest little treat incorporates two of nature’s best items: Chipotle peppers and beef.

The skewers are absolutely delicious, we cooked the meat medium/medium rare, and the chipotle give it an amazingly smokey and firey taste.  Balancing things out is a nice and refreshing Lime/Cilantro sour cream dip.

Lime Biryani

Melanie’s into summer cooking mode and when we came across this delicious sounding recipe, she couldn’t pass it up.  It makes enough to serve 4-6 people as an appetizer, but I think we managed to eat it all to ourselves in under 24 hours.  The raisins transformed this into a textured heaven ripe with sweetness.
