Fall is, not only the best time of the year, it’s also a time where friends and family get together to kick off the holiday season. Lemongrass & Mushroom Miso Soup
I sometimes get a hankering for lemongrass flavoured dishes, and at about 50c per stalk, there’s just no reason to cut it up, bruise it and toss it in an asian dish. Add to that this seemingly new obsession with soups and you’ve got this lovely and tasty creation above.

Well, we’ve had a butternut squash in the fridge for well over 6 weeks now (those things never seem to go bad!) and I finally decided to whip up a tasty favorite of ours! The maple syrup truly add a sweet and soft touch to this recipe, while the crunchy croutons balance out the textures.

Fall is upon us and nothing warms you up quite like a nice creamy soup. Well, on second though, chili does a great job too! I’ve been wanting to make a cream of some-kind-of-veggie soup for ages now, and since we recently purchased an immersion blender, there was no better time than now!

In London, winter was in full force yesterday, with about 20-30 centimeters of snow falling, it was one of those days where you wished you were curled up in front of a fireplace. On days like today, there are really only a handful of foods suitable, and a thick and hearty soup is one of those! We decided to experiment with a vegetable soup by adding some Orzo and Kale leaves. We’d never had Kale prior to this, but its crunchy and sharp taste made it a wonderful compliment to the soft and warm Orzo.

Finishing up my two part series on Peruvian food, this tasty soup is perfect for a cold and wet day (which it certainly is in London…) and provides a hearty, filling meal while remaining 100% Vegan! The Garbanzo beans (fancy way of saying Chick Peas) are an excellent source of fiber, folate and iron….all while being wonderfully tasty. The cilantro and parsley in this soup add a perfect southern touch!
