Crab Cakes with Tomato Ginger Jam

Sometimes you just get tired of big, typical meals.  I know we do!  So this past Sunday I decided to whip up a simple nutty salad and some tender crab cake appetizers.  The recipe calls for 26 mini cakes, but I decided to make 6 large ones.  The crab cake recipe called for 1/2 cup of Mayonnaise, but since we all know how fattening that would be, I heeded Melanie’s advice and used Natural Yogurt instead!

Grilled Lime Cilantro Shrimp

I’ve been making these grilled shrimp for years now, and I’ve never met a seafood lover who hasn’t enjoyed these.  They’re the perfect thing for summer BBQs and go amazingly well with a crisp refreshing white wine (we recommend a nice Pinot Grigio).  The lime and cilantro symbolize everything that summer can be to me, so I hope you can find a chance to whip these up, even though many of us are still in the cold white north!

Curry Grilled Mahimahi with Cucumber Mango Salsa

This winter season has been nothing but persistent.  In an effort to escape winter, I went ahead and prepared this dish.  It’s amazing how preparing this dish reminded me so much of the summer months – the vibrant colours of the salsa and the heat in the rice.  Delicious!  Pairing this dish with a crisp white Pinot grigio completes the meal!

Grilled Tilapia with Smoked Paprika & Wild Mushroom Couscous

We’ve always been huge fans of tilapia, but we’ve found often times it turns out a little on the tasteless side.  This recipe provided the needed kick, and flavouring to turn this highly tender and moist fish into a proper dish!  The smoked paprika along with the garlic created a wonderful smokey grilled tilapia fillet, while the soft and textured wild mushroom couscous rounded the dish.
