We bought some pork tenderloins from Costco recently and we’ve been experimenting with them. This is a random creation I whipped up this past weekend and though it isn’t a perfect recipe, I think there are some great ideas you could pull from it that would work well.
I decided to cook this tenderloin in a manner that I do not typically use for this cut of meat, but needless to say, it all worked out quite wonderfully. The pork was cooked in a simple vegetable/port broth with onions, garlic, thyme, carrots and fingerling potatoes.
I cooked it as you would cook a normal roast, and the gravy I whipped up in the end was just the sweetness the pork needed to send it over the edge! You’ll find you need to remove the tenderloin early from the roasting pan as the veggies and broth need extra time to simmer.

If you’ve ever made bacon in the microwave or a frying pan, you’ll have experienced the messy and greasy outcome. Not only that, your bacon likely isn’t flat by the time you’re done, right?
Well, if so, start using your oven to bake your bacon! 16-18 minutes @ 400 F (depending on desired crispy-ness), a cooking sheet and some aluminum foil (for easy cleanup) and you’re in business! I’ve never had bacon come out so evenly cooked, crispy and flat! Try it out!

Pulled Pork Sandwich
We’ve had a Pork shoulder blade roast in our freezer for some time, so I thought it would be time for some pulled pork sandwiches. Needless to say, I messed up with the original cooking length, and well, it wasn’t ready for at least 12 hours from the time I started it. Ah well, that’s the beauty of a slow cooker, you really can’t f@$%* stuff up!

We’ve had about 4 racks of ribs sitting in our freezer for a few weeks now so it was about time we made good use of them. Yeah, it’s good friday and apparently people don’t eat meat today, but I figure, why not? I used a tasty rub and made some semi-homemade bbq sauce to accompany that. The result was delicious!

Our latest little creation was put together with relative ease and items we just happened to have in the freezer/fridge! Scrounging around in our freezer, I discovered a wonderful piece of Pork Tenderloin and decided that is simply had to be curried this evening! We’ve been on quite a curry kick lately, but who can blame us really? I decided to pair this pork with Cajun Sugar Roasted Carrots (my very own concoction) and some traditional indian fried rice.
The end result was a delectable and tender pork dish, with crunchy and tasty carrots complimenting the subtly nuances of the indian fried rice. Simply to die for. We’ve got the entire recipe after the break!

Having recently found a smallish pork tenderloin tucked away in our freezer, I decided to make a tasty little feast out of the little guy. I went in with absolutely no plan of action, and since Melanie recently emptied our jar of sundried tomatoes, I thought marinating the Pork with the left over oil would be a great way to start! And was I right! Add some fresh rosemary, garlic & lemon juice and it turned into an entree perfect for any occasion!
