A food processor makes this a breeze...

Pesto’s often overlooked in our home, but with the spring air and birds a chirping, something refreshing was needed.  This recipe, which uses basil as it’s fragrant base, is simple, aromatic and took less than 5 minutes to make!  There are plenty of different pestos, but this traditional pesto is great for just about any meal or meat.

Angel Hair Pasta with Pesto Sauce

We’ve had a basil plant which we’ve been neglecting over the past months and since it’s clearly overgrown, it was time for drastic measures!  With this much basil on hand, pesto was the only solution!

Cajun Turkey Breast on Whole Wheat Pasta with Fresh Basil & Tomato Sauce

Walking through the meat department at our local Grocery Store I stumbled upon a Half Off Sale on fresh Turkey Breasts and I got to thinking….Since it’s been ages since I’ve done anything with a Turkey Breast, I figured this was as good a time as any.  We recently put together a rub for a Grilled Tilapia (view the item just below) and I thought I could modify the rub slightly and apply it to the turkey breast.

Rigatoni with feta cheese, Sun Dried Tomatos and Kale

Ever had kale?  Me neither, until this weekend.  And I must say that it’s delicious!  From this point on, kale is going to be digested by my stomach at least twice a month.  Kale is such a diversified vegetable, which can be used in many dishes- soups, pasta dishes or as a side – and it doesn’t take very long to cook.  This recipe was so simple and so tasty – go ahead…cook it and eat it up!
