Steak Chipotle Mayo Sandwich

The sun is shining and it’s nearly BBQ season at our home, so we decided to jump the gun and toss a few pork tenderloins on the bbq. The result was tender, succulent and flavourful. If you’ve never tried a rub before, it’s dead simple and the tasty crust that forms keeps all the tender juices inside as the meat cooks. Yummy!

Summer is quickly coming to an end, and BBQing days are numbered. We wanted to welcome a new guest to our home, so we thought we would do it in style, after having been inspired by Alain’s BBQ Tenderloin recently, we decided we’d do our own version! The pineapple vinegar added just the right amount of sweetness to the loin, pairing beautifully with the cajun spiced potatoes I roasted in the oven!

Having recently found a smallish pork tenderloin tucked away in our freezer, I decided to make a tasty little feast out of the little guy. I went in with absolutely no plan of action, and since Melanie recently emptied our jar of sundried tomatoes, I thought marinating the Pork with the left over oil would be a great way to start! And was I right! Add some fresh rosemary, garlic & lemon juice and it turned into an entree perfect for any occasion!
