Through recent inspiration (let’s blame Jesse over at beansandtoast.com) I decided to make a quick and easy Korma dish, but was tired of the usual chicken that we normally eat in Indian food. So instead I got some veggies, coconut milk and korma paste together and created a lovely vegetarian dish that tasty is and filling!

Every few days I get an insatiable craving for Indian food and this is how I decided to curb the hunger this time. Butter chicken is one of the most delectable and easily edible dish for just about any crowd, and this recipe proves that even your regular kitchen cook can provide a worthy Indian dish in a pinch.
I combined this saucy treat with some fresh naan bread (full recipe here) and some basmati rice. Read on for the recipe which includes a lovely tandoori chicken marinade.

During lunch today, a coworker brought up Indian food and I couldn’t stop thinking about. So, by the time I got home – I needed some Indian food. However, I did not want to go to the grocery store and I needed some food in my stomach within the next half hour. That’s when I decided to do some searching for a recipe. Low and behold, I found an incredibly simple recipe that was ready to be eaten in 15 minutes. If you’re looking for a quick weekday meal, look no further – I have found it for you. To make this a complete meal, I would suggest adding some rice, such as Basmati rice. Enjoy!!

Melanie’s into summer cooking mode and when we came across this delicious sounding recipe, she couldn’t pass it up. It makes enough to serve 4-6 people as an appetizer, but I think we managed to eat it all to ourselves in under 24 hours. The raisins transformed this into a textured heaven ripe with sweetness.

Yes, I’m still very much on my indian food craze and this weekend saw me attempt Chicken Tikka Masala. The marinade for the chicken was dead simple and resulted in the most tender pieces of chicken I have ever eaten. Cumin, Turmeric, Garam Masala and few other key ingredients make this tasty dish a dish to remember! Paired with some sweet oven roasted Sweet Potatoes and you’ve got a hearty, simple and tasty meal!

Scrounging around in our freezer, I discovered a wonderful piece of Pork Tenderloin and decided that is simply had to be curried this evening! We’ve been on quite a curry kick lately, but who can blame us really? I decided to pair this pork with Cajun Sugar Roasted Carrots (my very own concoction) and some traditional indian fried rice.
The end result was a delectable and tender pork dish, with crunchy and tasty carrots complimenting the subtly nuances of the indian fried rice. Simply to die for. We’ve got the entire recipe after the break!

Having recently picked up a few packets of Curry Paste at our local grocery store, I decided that I would surprise Melanie with a wonderful meal tonight. I also recently discovered that you can roast carrots, who would have thought? Well they sure did, so I thought I would give it a try as well. The meal was delicious and ridiculously easy to make, all in all it took about 40 minutes from start to table!

I discovered this delicious recipe in one of my many cooking magazines, and realized that I had yet to tamper with the creation of a lentil dish. The red lentil dal with charred onions explodes with infused tastes on your palette and is an excellent source of fiber. Serving the red lentils over a bed of basmati rice, or with naan bread, brought a little piece of Indian cuisine into our kitchen. Enjoy!!
