I was hankering for some Caribbean inspired eats last weekend, so I decided to whip this up. This is another of my completely random and 100% unique creations, and I must say it turned out fabulously! Marinating the fish for 24 hours allowed the simple and refreshing flavours to thoroughly burrow themselves into the fish. Add to that some lovely Mango salsa (recipe here) and you’ve got just the thing for a healthy meal.

With a few old bananas kicking around and some frozen berries, we searched high and low for a simple muffin recipe to suit our needs and this is the one that won! The muffins were the tastiest and most moist muffins we’ve ever had, let’s just say they didn’t last very long!

I stumbled upon this recipe while surfing online (credit goes to Natalie’s Killer Cuisine) and their health factor was through the roof, literally forcing me to make them. What’s best about these is that you aren’t limited to the ingredients I used, you can use your own choice of dried fruit, nuts and seeds.

I found a tasty looking turkey breast at our local grocer (it was marked down for a quick sale) and what was supposed to be an appetizer for a party ended up becoming our main course the following night!
This dish is very thai influenced, with the red curry and coconut milk giving it a smooth and flavourful aroma. These thin strips of turkey are skewer and cooked on a grill untill they are just tender. Dip in sauce and voila!

A savory summer sandwich
Melanie was away for the day so I had to fend for myself….just the chance to try something completely new! We’ve recently discovered these amazing whole seed pitas from Pita Break (Go Canadian food!) and I felt like adding bbq grilled chicken breast and some random homemade sauce to it all. Add some fresh lettuce mix, soft cheese and voila!
