I love baking cheesecakes, but most of all I really enjoy watching the reactions from people as they take that first bite of a cheesecake baked by me. During a recent team meeting at work, a conversation was had regarding the fact that I really enjoyed baking. A teammate of mine also enjoys baking, and it was quickly decided that a bake off would occur with each subsequent team meeting being the place for the judges, my other teammates, to taste test. Saying all that, this is the first dessert for the bake off. I can say that it went over very well – deliciously wonderful!

As many of you know, last weekend was Valentine’s Day – a day that I like to refer to as Love Day. It may sound cheesy, but I like it. Andre and I decided to make ourselves a fancy dinner, and I was in charge of dessert. (No surprise.) Since we’re both fans of fruity desserts, I made these delicious lemon curd tarts. And, I really wanted to use my new mini tart tin, so it worked out perfectly. If you’re a fan of tarty desserts, you’ll love the lemon flavour in these tarts. I had two extra tarts, and decided to make a blueberry coulis, which was a very nice compliment. I hope you enjoy your mini tarts!!

Russian Tea Cakes
Well, the Olympics are on in full force now (GO CANADA GO!!!), and a good friend of mine asked me to make 200 of these little gems for a Multicultural themed Olympic event we are having at work. For the past eight years, I’ve hosted a Christmas party for close friends. In preparation for the party, I become giddy as I set out to find a dessert recipe better than last year’s dessert. For my final dessert selection, I chose a Chocolate and ginger cake – the recipe has already been posted on the site – however, I thought to myself, who, amongst my group of friends, wouldn’t appreciate MORE chocolate goodies at the party?? I must confess that I have a really bad habit of baking new recipes the day I plan on sharing them with family and friends. In hindsight, this is probably, on some level, detrimental to my well-being and to my partner’s well being. The dessert will be baking, I begin to stress that the dessert isn’t going to turn out, while my partner reassures me; however, I never believe his kind words. (I stress only because I want the best for my family and friends.) In the end, I receive compliments from my guests and I my baker’s ego grows a little more. This dessert was no exception, and it turn out to be a hit. I encourage you to try this recipe out even though the baking method is different – everyone will love it!

We spent some time scouring through tastespotting a few weeks ago and compiled a list of recipes we wanted to try. This is the second in our list, and as a pumpkin dessert fan, this was a rather new and unique twist on what people usually simply toss into a pie. The cream cheese cloud topping added a freshness to the entire loaf.

This past weekend there was some birthday celebrating taking place at our house. My partner was celebrating his birthday, and he took a different approach this year. Usually, he adopts the whole ‘yeah, it’s my birthday and that’s okay . . . it doesn’t mean that much;’ however, this year he deviated taking centre stage. He wanted to have a ‘birthday party’ and all sorts of celebrations, which was great. Now, one of the most important parts of a birthday celebration is the cake and Andre let me explore my cake making skills, as he had no requests for a type of cake. Naturally, I selected a time consuming, but absolutely deliciously moist cake. I would recommend baking this cake for any kings of celebrations – even the ones that involve celebrating the simple things, like driving home and not stalling the car.
