Well, the Olympics are on in full force now (GO CANADA GO!!!), and a good friend of mine asked me to make 200 of these little gems for a Multicultural themed Olympic event we are having at work. These simple nuggets of decadent vanilla and walnuts melt in your mouth and these are quite literally the perfect companion to a steaming hot cup of tea.

Saffron Couscous Turkey Roll

Well, this is the second time Melanie makes this dish, and this was the first time we’ve made it together!  Much like the first time, this rolled turkey breast was absolutely delicious, and I wish I had a spare stomach for suppers like these.  This is the perfect dish for small holiday gatherings as a 2 pound turkey breast can easily feed 6-8 people!

We decided to try something new with this recipe post, and if you venture past this intro, you’ll notice we’ve added collages of candid prep shots.  This should provide you with more insight into our kitchen manners, and I give full credit to Melanie for this idea.  She’s been quite the shutter bug in the Kitchen lately!

Sweet Potato and Leek Pancakes with Applesauce and Sour Cream

It’s hump day and for some god forsaken reason I decided to spend a solid hour in the kitchen, actually, make it two, cooking up a storm.  It had been a while since I had dedicated myself to a few new recipes, and tonight was the night for me to break that slump.  This is the first of two recipes I worked on, and these potato pancakes are hands down the best potato pancakes I’ve ever tasted.  Read on for the full directions!
