I had a feeling it was time to bring out my Babycakes cookbook again. I was making Peanut Butter Blondies with Milk Chocolate Frosting as dessert for a pot-luck / games night with some friends, and thought I needed to achieve a sense of balance between vegan and main-stream-everyday-ingredients desserts. Also, I was really curious about the taste of the Agave-Sweetened Brownies. I have to say that I really enjoyed these brownies and would make them again. The only thing I would do differently is bake them a little shorter – in an effort to achieve the dense brownie texture. Enjoy!

What to do with all those bananas that are becoming to ripe to eat? In my mind, the obvious, and often first option, that pops into my head is banana bread. But, this time I wanted to bake something else and was in the mood for something sweet but not too sweet. I found a recipe for some chocolate and banana biscotti -yum! The biscotti turned out to have just enough sweetness when paired with your coffee, or tea. Delicious. I hope you enjoy this little treat.

For the past eight years, I’ve hosted a Christmas party for close friends. In preparation for the party, I become giddy as I set out to find a dessert recipe better than last year’s dessert. For my final dessert selection, I chose a Chocolate and ginger cake – the recipe has already been posted on the site – however, I thought to myself, who, amongst my group of friends, wouldn’t appreciate MORE chocolate goodies at the party?? Therefore, I made these super moist and seasonal chocolate cupcakes with peppermint frosting – yummy!

I must confess that I have a really bad habit of baking new recipes the day I plan on sharing them with family and friends. In hindsight, this is probably, on some level, detrimental to my well-being and to my partner’s well being. The dessert will be baking, I begin to stress that the dessert isn’t going to turn out, while my partner reassures me; however, I never believe his kind words. (I stress only because I want the best for my family and friends.) In the end, I receive compliments from my guests and I my baker’s ego grows a little more. This dessert was no exception, and it turn out to be a hit. I encourage you to try this recipe out even though the baking method is different – everyone will love it!

This past weekend there was some birthday celebrating taking place at our house. My partner was celebrating his birthday, and he took a different approach this year. Usually, he adopts the whole ‘yeah, it’s my birthday and that’s okay . . . it doesn’t mean that much;’ however, this year he deviated taking centre stage. He wanted to have a ‘birthday party’ and all sorts of celebrations, which was great. Now, one of the most important parts of a birthday celebration is the cake and Andre let me explore my cake making skills, as he had no requests for a type of cake. Naturally, I selected a time consuming, but absolutely deliciously moist cake. I would recommend baking this cake for any kings of celebrations – even the ones that involve celebrating the simple things, like driving home and not stalling the car.

Vanilla buttermilk icing recipe included!
A couple friends and I were planning a surprise bridal shower for a friend of ours. One thing I love about showers, actually any type of gathering, is deciding what will comprise the food selection. When you think of Banana Bread, you automatically assume that this is one of the simplest baking recipes a baker could tackle, right? When you’re craving a sweet comforting treat, there’s nothing better than a chewy chocolate chip cookie with a tall glass of milk. I whipped up a batch of these delicious cookies in no time, and enjoyed my treat. I wasn’t the only one enjoying these treats – my brother and partner couldn’t stop eating them. For all you chocolate fanatics, this cake ought to be on our dessert wish list. I must say that I was a little skeptical that I was going to enjoy this cake, I thought I was going to be in a sugar coma; however, I was surprised at how moist and delicious the cake was. I’m not sure why but as soon as I wrap up a school semester, I love to bake. Filling the house with that warm, inviting and something-is-baking fragrance is what I set out to do on Sunday, and I accomplished it by baking some delicious Banana & Chocolate Muffins. (My decision to bake something banana themed was also determined by the very ripe bananas sittting in our fruit basket.) These muffins are perfect for a little treat throughout the day or as breakfest.
