Well, Melanie brought dessert to the recent Big Time Game Night, and I had the honor of bringing some kind of finger sized appetizer….and I took it literally! These little tomato and chicken stuffed tortilla shells were an absolute hit! The mild spice and smokey flavor of chipotle made these delectable and the cold and refreshing guacamole I whipped up for dipping kept things balanced!

Ricotta Stuffed Chicken Breast

Every few days I get an insatiable craving for Indian food and this is how I decided to curb the hunger this time. Butter chicken is one of the most delectable and easily edible dish for just about any crowd, and this recipe proves that even your regular kitchen cook can provide a worthy Indian dish in a pinch.

Yes, I’m still very much on my indian food craze and this weekend saw me attempt Chicken Tikka Masala. Having recently picked up a few packets of Curry Paste at our local grocery store, I decided that I would surprise Melanie with a wonderful meal tonight. I also recently discovered that you can roast carrots, who would have thought? Well they sure did, so I thought I would give it a try as well.
