What is better than waking up on Sunday morning and having your partner cook you some light and fluffy pancakes that are filled with blueberries?? Now, these blueberries aren’t any type of blueberries, there the wild blueberries that are from Sudbury and are packed with blueberry goodness flavours. vegan apple toasty
So, I’ve been on this vegan kick lately. (Really, since I bought the Babycakes cookbook.) When I’m baking now, my thinking process goes sometime like this: if the baked goods are vegan, I can eat more of it and not feel guilty. And, I like that. Just because I’m saying that I eat more of vegan baked goods, I don’t want you to conger up this image of me eating the entire loaf within two days. I live with my partner, which means I have to share my baked goods. Right away, I only get to eat half of the loaf and it lasts for a week. In all seriousness, this apple toasty loaf is a delicious breakfast idea. Enjoy!!

Recently, Andre and I were visiting a friend in Toronto, who made us a delicious breakfast. Now, this breakfast wasn’t any ordinary meal because our friend isn’t an ordinary person and she doesn’t consume ordinary every day food, which sits well with Andre and I. Anyway, our friend made tofu scramble, which is suppose to resemble scramble eggs. I must say, that I was a little skeptic of the tofu scramble but after the first bite, it tasted quite similar to eggs. Another bonus I found, my stomach didn’t get that queasy feeling that usually comes about after eating eggs. I encourage all anyone who is reading this to try this recipe just once, and I’m certain you will become a fan!

When you think of Banana Bread, you automatically assume that this is one of the simplest baking recipes a baker could tackle, right? Sadly, I must admit that many, and I mean many, of my Banana Bread attempts have been a disaster – until today. If you’ve ever made bacon in the microwave or a frying pan, you’ll have experienced the messy and greasy outcome. Not only that, your bacon likely isn’t flat by the time you’re done, right?
Well, if so, start using your oven to bake your bacon! 16-18 minutes @ 400 F (depending on desired crispy-ness), a cooking sheet and some aluminum foil (for easy cleanup) and you’re in business! I’ve never had bacon come out so evenly cooked, crispy and flat! Try it out!

These pancakes have been a staple in my diet for many, many years. From my toddler days right up until this morning, this simple and versatile recipe has certainly proven it’s worth! I got this recipe from my mother when I moved away for University, and since then I’ve been busy modifying and adding to it. This week’s version included some vanilla extract and Amaretto Liqueur with some fresh strawberries!
