Blackened Spice

This is a very simple spice mixture that is excellent for use in spicy seafood dishes, and even as a base for a good carribean jerk rub.  The idea is that once it’s grilled, the spices will blacken, giving the food a wonderful flavor and color!

Southwest Chipotle Chicken

If you’re in a pinch for time, like say on a hectic Monday evening, these chicken breasts are perfect to satisfy the family!  These are by no means complicated, and I whipped up the recipe in about 20 seconds.  All you need is lime juice, a chipotle pepper, sour cream and pepper! That’s right, sour cream, it keeps the meat very tender!

We’ve had a Pork shoulder blade roast in our freezer for some time, so I thought it would be time for some pulled pork sandwiches.  Needless to say, I messed up with the original cooking length, and well, it wasn’t ready for at least 12 hours from the time I started it.  Ah well, that’s the beauty of a slow cooker, you really can’t f@$%* stuff up!

BBQ Baby Back Pork Ribs

bbq_ribs_afterWe’ve had about 4 racks of ribs sitting in our freezer for a few weeks now so it was about time we made good use of them.  Yeah, it’s good friday and apparently people don’t eat meat today, but I figure, why not?  I used a tasty rub and made some semi-homemade bbq sauce to accompany that.  The result was delicious!

BBQ Pork Tenderloin Rub

The sun is shining and it’s nearly BBQ season at our home, so we decided to jump the gun and toss a few pork tenderloins on the bbq.  The result was tender, succulent and flavourful.  If you’ve never tried a rub before, it’s dead simple and the tasty crust that forms keeps all the tender juices inside as the meat cooks. Yummy!

Smoke and Fire Beef Skewers with Lime Cilantro Dip

beef_skewersWe’ve been entertaining quite a bit as of late, and we’ve been digging up some recipes from our great big book of appetizers (it’s actually quite diminutive).  This latest little treat incorporates two of nature’s best items: Chipotle peppers and beef.

The skewers are absolutely delicious, we cooked the meat medium/medium rare, and the chipotle give it an amazingly smokey and firey taste.  Balancing things out is a nice and refreshing Lime/Cilantro sour cream dip.

Grilled Lime Cilantro Shrimp

I’ve been making these grilled shrimp for years now, and I’ve never met a seafood lover who hasn’t enjoyed these.  They’re the perfect thing for summer BBQs and go amazingly well with a crisp refreshing white wine (we recommend a nice Pinot Grigio).  The lime and cilantro symbolize everything that summer can be to me, so I hope you can find a chance to whip these up, even though many of us are still in the cold white north!
