I love baking cheesecakes, but most of all I really enjoy watching the reactions from people as they take that first bite of a cheesecake baked by me. During a recent team meeting at work, a conversation was had regarding the fact that I really enjoyed baking. A teammate of mine also enjoys baking, and it was quickly decided that a bake off would occur with each subsequent team meeting being the place for the judges, my other teammates, to taste test. Saying all that, this is the first dessert for the bake off. I can say that it went over very well – deliciously wonderful!

Russian Tea Cakes
Well, the Olympics are on in full force now (GO CANADA GO!!!), and a good friend of mine asked me to make 200 of these little gems for a Multicultural themed Olympic event we are having at work. These simple nuggets of decadent vanilla and walnuts melt in your mouth and these are quite literally the perfect companion to a steaming hot cup of tea.

I had a feeling it was time to bring out my Babycakes cookbook again. I was making Peanut Butter Blondies with Milk Chocolate Frosting as dessert for a pot-luck / games night with some friends, and thought I needed to achieve a sense of balance between vegan and main-stream-everyday-ingredients desserts. Also, I was really curious about the taste of the Agave-Sweetened Brownies. I have to say that I really enjoyed these brownies and would make them again. The only thing I would do differently is bake them a little shorter – in an effort to achieve the dense brownie texture. Enjoy!

Well, Melanie brought dessert to the recent Big Time Game Night, and I had the honor of bringing some kind of finger sized appetizer….and I took it literally! These little tomato and chicken stuffed tortilla shells were an absolute hit! The mild spice and smokey flavor of chipotle made these delectable and the cold and refreshing guacamole I whipped up for dipping kept things balanced!

the blondies
Recently, Andre and I attended a games night with some friends. This games night was pot-luck style – one of my favorites! I can honestly say when I was first told about the games night, I immediately began to brainstorm about potential desserts. I decided on peanut blondies with frosting. These peanut butter blondies are delicious. The blondie is dense and packed with brown sugar and peanut butter flavor, and the milk chocolate frosting is the perfect finishing touch. Why not indulge a little with these brownies and a tall glass of milk.

What to do with all those bananas that are becoming to ripe to eat? In my mind, the obvious, and often first option, that pops into my head is banana bread. But, this time I wanted to bake something else and was in the mood for something sweet but not too sweet. I found a recipe for some chocolate and banana biscotti -yum! The biscotti turned out to have just enough sweetness when paired with your coffee, or tea. Delicious. I hope you enjoy this little treat.

I find cranberry and orange muffins a bit difficult to master, as the cranberry is very bold and has great potential to hide any of the orange flavors. However, with this recipe you could taste the orange flavor just as much as the cranberry. There was a very nice balance. These muffins are perfectly moist and great for breakfast or lunches. Enjoy!

Well, we had something similar at a friends’ place some time ago and his version was so darn tasty that I just simply had to try and recreate them. Did I recreate them successfully you might ask? can you guess what that can is lurking in the background?
Melanie was busy making some super duper delicious chinese dumplings (recipe to follow shortly), and after having shredded half of the cabbage, realized she had far too much for her recipe. I decided to take the cabbage off her hands, and whipped together an impromptu bowl of carrot and cabbage slaw. The addition of chipotle peppers gave the finished product some lasting heat.
