Crab Cakes with Tomato Ginger Jam

Sometimes you just get tired of big, typical meals.  I know we do!  So this past Sunday I decided to whip up a simple nutty salad and some tender crab cake appetizers.  The recipe calls for 26 mini cakes, but I decided to make 6 large ones.  The crab cake recipe called for 1/2 cup of Mayonnaise, but since we all know how fattening that would be, I heeded Melanie’s advice and used Natural Yogurt instead!

Cucumber Mango Salsa

Mango Cucumber Salsa

I’ve decided to go southern a bit, and can you really blame a Canuck in the dead of winter?  This recipe will be used tomorrow night for our marinating pickerel filets we picked up in St Jacobs.  So if you’re looking for an easy, fresh and healthy way to spice up a fish filet, pork chop or chicken breast, look no further my friends!  This simple recipe can be made in under 15 minutes and stored for 5-7 days in the fridge.

Carrot & Chickpea Bean Salad

I made this salad almost a month ago when I was on my mission of finding more healthy lunch meals, but am only getting around to posting the recipe now.   The recipe came from the Hungry Cravings website.   I’m sure people can appreciate the timing of the post as it coincides with the beginning of a new year – the time when everyone vows to eat healthier and become more fit.  This is an incredibly easy recipe and delicious for lunches.  Enjoy!

Zucchini and Corn Taco Seasoned Quinoa Salad

I’ve been on the hunt for tasty salad recipes.  I know salads are traditionally a summer time meal, but lately I’ve felt like my staple lunch meal needed a little zesting up.  I was also looking for a dish that was healthy.  For those of you who have never heard of quinoa is a grain like crop with great nutritional value, as its protein content is very high (12%–18%). Further, quinoa is It is a good source of dietary fiber and phosphorus and is high in magnesium and iron.  Quinoa is gluten-free and considered easy to digest.  This salad is incredibly easy to create and delicious to eat.  Enjoy! Napa Cabbage and Carrot Slaw

Melanie was busy making some super duper delicious chinese dumplings (recipe to follow shortly), and after having shredded half of the cabbage, realized she had far too much for her recipe.  I decided to take the cabbage off her hands, and whipped together an impromptu bowl of carrot and cabbage slaw.  The addition of chipotle peppers gave the finished product some lasting heat.

Greek Salad

We sometimes have hearty vegetables laying around the house, well, in the fridge I suppose, and what better way to make use of them than to make a delightfully refreshing chunky greek salad.  This traditional recipe is spiced up with some sundried-tomato infused olive oil for dressing and some freshly dried mediterranean herbs.

Lime Biryani

Melanie’s into summer cooking mode and when we came across this delicious sounding recipe, she couldn’t pass it up.  It makes enough to serve 4-6 people as an appetizer, but I think we managed to eat it all to ourselves in under 24 hours.  The raisins transformed this into a textured heaven ripe with sweetness.

Sesame Encrusted Salmon Salad with Shrimp, fresh veggies

We recently made some fresh shrimp rolls, a la thai, and we had left over veggies and vermicelli rice noodles.  I blame it on my over zealousness while preparing the dish, but it certainly did work out in the end!  Sometimes the best meals are made of leftover items.
 
This dish is entirely my creation, so beware, but it turned better than I could imagine.  Fresh veggies, herbs seafood and a lovely sauce makes this a tasty appetizer for a dinner party! Grab my loosely defined instructions after the jump and get creating!

Dilled Potato Salad à la Nicoise

We discovered an interesting salad sometime ago, and have not been able to replicate it since.  It consisted of a Potato Salad hybridized with a Nicoise Salad.  Picture a standard Potato Salad, but add to that Tuna, Capers and Eggs. It’s an entire meal in one salad and simply can’t be beat with a chilled glass of Pinot Grigio on a warm summer day.
