Blueberry Coulis
This is a really simple recipe that you can pair with a variety of desserts. Andre and I enjoyed this blueberry coulis on the lemon tarts, which balanced the tarty falvour.

Well, I originally made this lasagna for a boys night at a friends, and when Melanie got wind of just how great it was, she rather politely demanded that I make her a fresh batch the following weekend. I added spinach to the recipe, as per the general consensus, and what came out of the oven was moist, meaty and tasty.

I was hankering for some Caribbean inspired eats last weekend, so I decided to whip this up. This is another of my completely random and 100% unique creations, and I must say it turned out fabulously! Marinating the fish for 24 hours allowed the simple and refreshing flavours to thoroughly burrow themselves into the fish. Add to that some lovely Mango salsa (recipe here) and you’ve got just the thing for a healthy meal.

Well, last Sunday was Valentine’s day, or as Melanie likes to call it, Love day. We decided it was about time we dove into the wonderful world of cast iron cooking, and since I had some amazing local striploin steaks to make for supper, I just had to try Alton Brown’s oven cooked steak recipe. The recipe uses a cast iron skillet, so we decided to pay Kiss the Cook a visit since they had all Le Creuset cookware on sale at 25% off!
If you’re looking for a dead simple steak recipe and don’t feel like standing outside with your barbecue, this is exactly what you want. Make sure you have the kitchen well ventilated, this does tend to create quite a bit of smoke.

As many of you know, last weekend was Valentine’s Day – a day that I like to refer to as Love Day. It may sound cheesy, but I like it. Andre and I decided to make ourselves a fancy dinner, and I was in charge of dessert. (No surprise.) Since we’re both fans of fruity desserts, I made these delicious lemon curd tarts. And, I really wanted to use my new mini tart tin, so it worked out perfectly. If you’re a fan of tarty desserts, you’ll love the lemon flavour in these tarts. I had two extra tarts, and decided to make a blueberry coulis, which was a very nice compliment. I hope you enjoy your mini tarts!!

Well, the Olympics are on in full force now (GO CANADA GO!!!), and a good friend of mine asked me to make 200 of these little gems for a Multicultural themed Olympic event we are having at work. These simple nuggets of decadent vanilla and walnuts melt in your mouth and these are quite literally the perfect companion to a steaming hot cup of tea.

I’ve decided to go southern a bit, and can you really blame a Canuck in the dead of winter? This recipe will be used tomorrow night for our marinating pickerel filets we picked up in St Jacobs. So if you’re looking for an easy, fresh and healthy way to spice up a fish filet, pork chop or chicken breast, look no further my friends! This simple recipe can be made in under 15 minutes and stored for 5-7 days in the fridge.
Enjoy!

I had a feeling it was time to bring out my Babycakes cookbook again. I was making Peanut Butter Blondies with Milk Chocolate Frosting as dessert for a pot-luck / games night with some friends, and thought I needed to achieve a sense of balance between vegan and main-stream-everyday-ingredients desserts. Also, I was really curious about the taste of the Agave-Sweetened Brownies. I have to say that I really enjoyed these brownies and would make them again. The only thing I would do differently is bake them a little shorter – in an effort to achieve the dense brownie texture. Enjoy!

Well, Melanie brought dessert to the recent Big Time Game Night, and I had the honor of bringing some kind of finger sized appetizer….and I took it literally! These little tomato and chicken stuffed tortilla shells were an absolute hit! The mild spice and smokey flavor of chipotle made these delectable and the cold and refreshing guacamole I whipped up for dipping kept things balanced!
Give these a try, they don’t take very long to make and they’ll fly off the plate! Read on past the break for the full directions and ingredients list.

Recently, Andre and I attended a games night with some friends. This games night was pot-luck style – one of my favorites! I can honestly say when I was first told about the games night, I immediately began to brainstorm about potential desserts. I decided on peanut blondies with frosting. These peanut butter blondies are delicious. The blondie is dense and packed with brown sugar and peanut butter flavor, and the milk chocolate frosting is the perfect finishing touch. Why not indulge a little with these brownies and a tall glass of milk.
