By melanie

When you think of Banana Bread, you automatically assume that this is one of the simplest baking recipes a baker could tackle, right?   Sadly, I must admit that many, and I mean many, of my Banana Bread attempts have been a disaster – until today.  I was skimming through the Tastespotting website and found a collection of banana bread recipes.  I thought that it was about time I master the art of baking Banana Bread.  Let me tell you that today, I was a success story.   I had redeemed myself as a baker because my Banana Bread turned out wonderfully moist and delicious!  Read on for the wonderful recipe.

Peach Raspberry Clafoutis

By melanie

My partner and I received the most amazing gift ever for our Commitment Ceremony – a Kitchen Aid Mixer!  Since then, all I’ve wanted to do is bake, and I’ve been looking for every possible excuse.  This weekend was no exception.  My partner and I were invited to a Brisket and Beans BBQ, which was delicious, and I thought a nice compliment to the meat would be a light fruit dish.  My search for such a dish led me to ‘Christine’s Corners’ website, which is were I found the ‘Peach Melba Clafoutis’ recipe.  This recipe is absolutely amazing – so simple, with a custard filling goodness in the centre.  I hope you enjoy this dish as much as the guests at the BBQ did!

I stumbled upon this recipe while surfing online (credit goes to Natalie’s Killer Cuisine) and their health factor was through the roof, literally forcing me to make them.  What’s best about these is that you aren’t limited to the ingredients I used, you can use your own choice of dried fruit, nuts and seeds.

Full details after the jump!

Steak Chipotle Mayo Sandwich

I had an impromptu day off today (lightning damaged our transformer at the office) so I thought I would take the time to make a simple yet tasty sandwich for lunch.  I love a little heat in my dishes, and that was the goal of the tasty mayo I whipped up.  Melanie loved it too!

Jerk Tilapia with Caramelized Peaches

Jerk Tilapia with Caramelized Peaches

Jerk Tilapia with Caramelized Peaches

Tilapia is by far our household’s favorite fish.  It’s cheap, meaty and deliciously nutty! I decided to add a carribean twist to our pan seared tilapia, and while I was making it, thought it could use something sweet and refreshing to balance out the heat.  I spotted a peach in the corner of my eye and instantly I knew that was the ticket!
