Oven Baked Bacon

If you’ve ever made bacon in the microwave or a frying pan, you’ll have experienced the messy and greasy outcome.  Not only that, your bacon likely isn’t flat by the time you’re done, right?

Well, if so, start using your oven to bake your bacon!  16-18 minutes @ 400 F (depending on desired crispy-ness), a cooking sheet and some aluminum foil (for easy cleanup) and you’re in business!  I’ve never had bacon come out so evenly cooked, crispy and flat!  Try it out!

I sometimes get a hankering for lemongrass flavoured dishes, and at about 50c per stalk, there’s just no reason to cut it up, bruise it and toss it in an asian dish.  Add to that this seemingly new obsession with soups and you’ve got this lovely and tasty creation above.

Butternut Squash & Maple Syrup Soup

Well, we’ve had a butternut squash in the fridge for well over 6 weeks now (those things never seem to go bad!) and I finally decided to whip up a tasty favorite of ours!  The maple syrup truly add a sweet and soft touch to this recipe, while the crunchy croutons balance out the textures.

Southwest Chipotle Chicken

If you’re in a pinch for time, like say on a hectic Monday evening, these chicken breasts are perfect to satisfy the family!  These are by no means complicated, and I whipped up the recipe in about 20 seconds.  All you need is lime juice, a chipotle pepper, sour cream and pepper! That’s right, sour cream, it keeps the meat very tender!
