I always find that roasting whole chickens is one of the simplest, and tastiest, recipes you can create for a family meal. This latest whole chicken recipe that I made reminded me of summer – the lemon and rosemary. To create more of a summer recipe, try cooking this chicken rotisserie style on the barbecue.

Well, it’s the summer season (close enough!) and we, like many others, love the Food & Drink magazine that the LCBO puts out quarterly. The sun was shining, we were tired of wine, beer and regular spirits, but we wanted something new and tasty.

I found a tasty looking turkey breast at our local grocer (it was marked down for a quick sale) and what was supposed to be an appetizer for a party ended up becoming our main course the following night!
This dish is very thai influenced, with the red curry and coconut milk giving it a smooth and flavourful aroma. These thin strips of turkey are skewer and cooked on a grill untill they are just tender. Dip in sauce and voila!

As colorful as it was flavorful!
Yet another gem we discovered on Tastespotting.com and what a tasty little dish this was. We’ve never used Phyllo pastry before, and combining it with leek and ricotta sounded like such a delicious dish! Well, it was! The pastry’s light and flaky and the filling is firm but moist!

A food processor makes this a breeze...
Pesto’s often overlooked in our home, but with the spring air and birds a chirping, something refreshing was needed. This recipe, which uses basil as it’s fragrant base, is simple, aromatic and took less than 5 minutes to make! There are plenty of different pestos, but this traditional pesto is great for just about any meal or meat.

Pulled Pork Sandwich
We’ve had a Pork shoulder blade roast in our freezer for some time, so I thought it would be time for some pulled pork sandwiches. Needless to say, I messed up with the original cooking length, and well, it wasn’t ready for at least 12 hours from the time I started it. Ah well, that’s the beauty of a slow cooker, you really can’t f@$%* stuff up!

A savory summer sandwich
Melanie was away for the day so I had to fend for myself….just the chance to try something completely new! We’ve recently discovered these amazing whole seed pitas from Pita Break (Go Canadian food!) and I felt like adding bbq grilled chicken breast and some random homemade sauce to it all. Add some fresh lettuce mix, soft cheese and voila!
