Smoke and Fire Beef Skewers with Lime Cilantro Dip

beef_skewersWe’ve been entertaining quite a bit as of late, and we’ve been digging up some recipes from our great big book of appetizers (it’s actually quite diminutive).  This latest little treat incorporates two of nature’s best items: Chipotle peppers and beef.

The skewers are absolutely delicious, we cooked the meat medium/medium rare, and the chipotle give it an amazingly smokey and firey taste.  Balancing things out is a nice and refreshing Lime/Cilantro sour cream dip.

Pumpernickel & Rye Stuffing

We had a quiet Thanksgiving monday feast, just the two of us and we were tired of the standard turkey stuffing.
