Tomatoes Stuffed with Corn Soufflé

We’re slowly making our way through our huge folder of recipes, and upon seeing this one, I was compelled to taste it once more!  This makes an excellent and light summer dish, the sweet corn and the slightly caramelized tomatoes blend beautifully with the fresh spices! Combine with a nice Riesling and you’re set!

Curried Turkey Scaloppini

Banana & Chocolate Muffins

I’m not sure why but as soon as I wrap up a school semester, I love to bake.  Filling the house with that warm, inviting and something-is-baking fragrance is what I set out to do on Sunday, and I accomplished it by baking some delicious Banana & Chocolate Muffins.  (My decision to bake something banana themed was also determined by the very ripe bananas sittting in our fruit basket.)  These muffins are perfect for a little treat throughout the day or as breakfest.

Pork Souvlaki with Fresh Veggies

You can tell spring has finally sprung: The Grill is fired up and hasn’t been turned off in days!  Our latest little creation was put together with relative ease and items we just happened to have in the freezer/fridge!  This pork based Souvlaki is excellent as a lunch item and is packed with healthy vegetables!

Mother’s Homemade Pancakes

These pancakes have been a staple in my diet for many, many years.  From my toddler days right up until this morning, this simple and versatile recipe has certainly proven it’s worth!  I got this recipe from my mother when I moved away for University, and since then I’ve been busy modifying and adding to it.  This week’s version included some vanilla extract and Amaretto Liqueur with some fresh strawberries!

Khaukswe Chicken with Naan

We’re still huge fans of indian cuisine, and after having had a wonderful meal at a local indian resto last night, I just had to have more!  We decided to try out this recipe, as we had discovered it at the end of March.  We had a beautiful sunny day that just screamed outdoor grilling, so we figured how was the right time!

Celebration Pizza: Artichokes, Pineapple, Turkey & Sun Dried Tomatoes!

Well, tonight was Melanie’s very last Undergraduate Class, so I thought I would whip up a delicious supper for us to enjoy!  We hadn’t made pizza in some time, and I had recently discovered some interesting ingredients I just had to try!  As an appetizer I treated Melanie to her favorite, Tempura Shrimp Sushi and along with supper, a wonderful Asti Champagne, to really hit it home!
