After many attempts of baking banana bread, I decided to buy a new pan. Previously, I was using a glass bread loaf dish – I strongly recommend against using a glass baking dish. When I attempted this recipe for its final time, I used an aluminum baking dish and the banana bread turned out perfectly!

Having recently picked up a few packets of Curry Paste at our local grocery store, I decided that I would surprise Melanie with a wonderful meal tonight. I also recently discovered that you can roast carrots, who would have thought? Well they sure did, so I thought I would give it a try as well. The meal was delicious and ridiculously easy to make, all in all it took about 40 minutes from start to table!

Well, it's lazy hazy sunday afternoon and nothing fits better for supper than making your own fajitas! Melanie decided to snazz things up a bit by recommending that we add some lime juice and fresh ginger when we pan seared the chicken. That turned out to be an excellent choice, as it turned this sometimes over done and drawn out dish into a tasty fiesta!

Finishing up my two part series on Peruvian food, this tasty soup is perfect for a cold and wet day (which it certainly is in London…) and provides a hearty, filling meal while remaining 100% Vegan! The Garbanzo beans (fancy way of saying Chick Peas) are an excellent source of fiber, folate and iron….all while being wonderfully tasty. The cilantro and parsley in this soup add a perfect southern touch!

Seeing as the weekend popped up again, I decided to try my hand at two themed dishes: Peruvian Cooking Style! This first of two dishes is a marvellous soft and delicate Moroccan Chicken which proves that dates can truly liven up any dish. If you've been wanting to try a sweet and tasty dish that requires little to no preparation, this is the recipe you've been waiting for. We paired the dish with a wonderful wine from New Zealand (Brancott's 2007 Sauvignon Blanc) and our mouths just couldn't stop thanking us.

I discovered this delicious recipe in one of my many cooking magazines, and realized that I had yet to tamper with the creation of a lentil dish. The red lentil dal with charred onions explodes with infused tastes on your palette and is an excellent source of fiber. Serving the red lentils over a bed of basmati rice, or with naan bread, brought a little piece of Indian cuisine into our kitchen. Enjoy!!
